Got it working at last Very Happy
With some assistance from Voipfone tech support, we decided to DISABLE the outbound proxy... now works fine behind my Linksys WAG54G:

To help others, these are my complete (and now working config files for my Cisco 7940) I'm pretty sure that they will also work for the Cisco 7960.
